Ingredients
For the cake:
2 cups all-purpose flour
1 3/4 cups sugar
3/4 cup cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 /2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
For the chocolate-mint glaze:
1 cup unsalted butter, softened
4 cups powdered sugar
2 tablespoons milk
1/2 teaspoon peppermint extract (after Adjust taste)
Green food coloring (optional)
1 cup mini chocolate chips
Preparation
Preheat oven and baking pans: Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.Mix dry ingredients: In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda and salt.
Add wet ingredients: Add milk, vegetable oil, eggs and vanilla to the flour mixture and mix well. Carefully add the boiling water (the dough will be thin).
Baking: Divide the dough between the prepared tins. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Make the glaze: Beat the butter until creamy. Gradually add powdered sugar, milk, peppermint extract and food coloring until frosting is smooth and spreadable. Add the chocolate chips.
Assemble the cake: Place a layer of cake on the serving plate and spread with icing.Repeat with remaining layers. Cover the outside of the cake with the remaining frosting.
Garnish: Garnish with additional chocolate chips or mint leaves if desired.
