Ingredients
6 cups of cubed sandwich bread from one loaf
4 sizable eggs
1 cup of full-fat milk
a quarter cup of sugar, granulated
vanilla extract, 1 teaspoon
1/4 teaspoon of cinnamon, ground
1/4 cup melted butter
half a cup of brown sugar
For the topping, 1 teaspoon of ground cinnamon
Preparation
Start by getting your oven to 350 degrees Fahrenheit (175 degrees Celsius). To make muffins, grease or line a 12-cup muffin pan.
2. Combine the eggs, milk, sugar, vanilla essence, and half a teaspoon of cinnamon in a big basin and whisk to combine. Coat the bread cubes completely by adding them to the egg mixture and stirring. Soak it for around five minutes.
3. Press down gently to compress the bread mixture after spooning it equally into the muffin cups that have been prepped.
4. Melt the butter and combine it with the brown sugar and another teaspoon of cinnamon in a small bowl. Pour a little of this mixture into each muffin pan.
5. Preheat the oven to 200 degrees Fahrenheit and bake for 20 to 25 minutes, or until the edges are golden and crisp.
6. After a few minutes, take the muffins out of the pan and let them cool. Warm it up before plating.

If you’re looking to spice things up a little, try mixing in some chopped almonds or raisins with the bread mixture. Tossing in some finely sliced apples can provide a delightful fruity touch if you like apple cinnamon tastes. If you want to make it lighter, you may use almond milk instead of whole milk and a sugar replacement for the brown and granulated sugars.
