Although green beans and bacon go together like clockwork, there’s one more little hidden ingredient that makes them even better: the oven. Green beans have a lovely caramelized flavor when they are roasted. They get a little additional assistance in the recipe below from some roasted onions, making it a low-carb meal with plenty of sweetness.
You’ll fry just enough bacon in this recipe to have the fat necessary to cook your beans, but you may want to save some bacon grease for each time you cook a couple pieces for breakfast. The thick, smokey fat adds a delightful depth to eggs or chicken.
Ingredients for Low-Carb Green Beans with Bacon
Half a pound of bacon, two pounds of string beans, and one chopped or frenched white onion
1/4 tsp salt
1/4 tsp pepper
Guidelines
1. Turn the oven up to 450 degrees.
2. Place the bacon on a rimmed baking sheet on a wire rack. Bake till crisp, 15 minutes or so.
3. Take out of the oven and place the bacon aside. Sort the fat with care.
4. Combine the beans, onion, pepper, and salt. Pour in around three to four tablespoons of the lard, then thoroughly mix.
5. Spread out the beans on a baking sheet in an equal layer. To make sure they are cooked evenly, roast for 20 minutes, stirring once.
6. In the last minute of cooking, chop the bacon and sprinkle it over the green beans to reheat them.
